We choose beans the way good wine is chosen — for terroir, for character, for the willingness to be specific. We roast to draw out structure, not to mute it. We do not write for the casual drinker.

Every decision we make about this coffee answers to one of these four ideas. The rest is noise.
We will not blend a season's soul away for the sake of a consistent house cup. The differences between lots are the point.
Not to a curve. Each origin asks for a different treatment. We listen to the lot before we decide on the profile.
We assume you will respect this coffee. We will tell you how to brew it. We trust you to listen, and to argue when we are wrong.
The third-pour. The temperature pen. The burr grinder dialed in by a tenth. We do not write for the casual market.
Every harvest, we travel. Sometimes to growers we have known for years. Sometimes to a single lot on a slope no one has named yet.
