Auville is not that coffee.

We choose beans the way good wine is chosen — for terroir, for character, for the willingness to be specific. We roast to draw out structure, not to mute it. We do not write for the casual drinker.

Four things we will not compromise.

Every decision we make about this coffee answers to one of these four ideas. The rest is noise.

01 / Origin
Single origin or nothing.

We will not blend a season's soul away for the sake of a consistent house cup. The differences between lots are the point.

02 / Roast
Roasted to the bean.

Not to a curve. Each origin asks for a different treatment. We listen to the lot before we decide on the profile.

03 / Method
No shortcuts. No excuses.

We assume you will respect this coffee. We will tell you how to brew it. We trust you to listen, and to argue when we are wrong.

04 / Drinker
Written for the obsessed.

The third-pour. The temperature pen. The burr grinder dialed in by a tenth. We do not write for the casual market.

We taste before we buy. We refuse before we settle.

Every harvest, we travel. Sometimes to growers we have known for years. Sometimes to a single lot on a slope no one has named yet.

The coffee in your hands started as a conversation in someone else's language, on someone else's land, in a morning that wasn't yours.

That matters. We carry it forward into every roast.

Auville started with a question: why is coffee treated like a commodity when it tastes like a place? Every harvest tells the story of a specific hillside, a particular season, the hands that picked it. We decided to build a brand around that truth.

We are small by design. Each lot is chosen in person, roasted to its own profile, and released in limited quantities. No blends, no shortcuts, no chasing the mass market.

Where do you source your coffee?
We travel to origin each harvest. Our current lots come from Colombia, Ethiopia, and Guatemala — each chosen in person, not from a broker's catalog.
How should I brew it?
Every bag ships with a brew card specific to that lot. We optimize for pour-over and French press, but the card covers ratios for any method.
When do you ship?
We roast on Mondays and ship on Tuesdays. Orders placed by Sunday at midnight go out that week. Freshness matters — we never ship coffee older than three days off roast.
Is this a subscription?
No. Each lot is a standalone release. We announce the next lot, you buy it if you want it. No commitment, no boxes you forget to cancel.
Why is it priced higher than grocery coffee?
Because we pay growers above Fair Trade, travel to origin, roast in micro-batches, and release in limited quantities. The price reflects what it costs to do it right — not what the commodity market says coffee should cost.
